Ortrugo, dry sparkling wine

Type: Colli Piacentini DOC dry sparkling Ortrugo

Varietal: Ortrugo
Historical indigenous varietal. Medium-large cluster (280–350 gr), compact with a large number of berries. Medium-size berry, rounded, juicy pulp, not very acidic, medium-thick skin of a greenish-yellow colour

Vinification: Soft pressed, controlled fermentation in steel tanks for 4/5 days with selected yeasts which enhance the aromatic qualities of the varietal

Colour: Straw-yellow tending towards a characteristic light green, typical of this wine

Aroma: medium intense, good hints of citrus, especially grapefruit; good nose acidity and balance

Flavour: delicate and fresh, the characteristic bitter aftertaste is softened with hints of mature citrus; good overall acidity

Serving: taste at 10 – 12°C in summer, 13 – 15°C in winter; serve in stemmed glasses, rounded with small opening

Pairing: enhances the flavour of delicate first courses following the Emilian and Piacentine traditions, as well as fish dishes. Excellent also as an aperitif served chilled with slices of Piacentine DOP salame
