Type: Colli Piacentini DOC dry pétillant Malvasia
Varietal: aromatic Malvasia di Candia
Traditional grape varietal. Medium cluster, tapered, pyramidal, thick winged, slightly loose-packed (130-200 gr). Medium spherical berry. Thin, sturdy skin, not very veiled, golden yellow colour with dark brown spots. Very aromatic juice.
Vinification: soft pressed, temperature controlled fermentation in steel tanks for 4/5 days with both native and selected yeasts
Colour: bright straw yellow, limpid and clean colour
Aroma: fruity, intense and clean with a good bouquet of mature Malvasia di candia, and excellent nose balance
Flavour: aromatic, weighty and fruity, with hints of mature peaches; rendered very pleasing by a good overall acidity
Serving: taste at 10 – 12°C in summer, 13 – 15°C in winter; serve in stemmed glasses, rounded with narrow opening
Pairing: a good and pleasing wine, this slightly sparkling version of Malvasia is excellent as a refreshing aperitif, it pairs well with delicate dishes following the traditional recipes of the Emilia and Piacentine areas, savoury flan, white meats, tarts and dry pastries
