Bonarda (traditional): Small cone-shaped cluster, very slightly winged, irregular and loose-packed (150-250 gr); small berry, round, very sweet; skin covered with a slight powdery veil, often rather tough, slightly tannic, black colour
Vinification: fermentation in steel tanks with both native and selected yeasts which enhance the characteristics of the varietal
Colour: brilliant ruby red with violet highlights, uniform and clean colour
Aroma: persistent, intense, mature fruit with hints of violets and red berry preserves; excellent aroma balance
Flavour: pleasantly rounded, well-bodied and slightly tannic; notes of mature red fruits, nicely savoury
Serving: 14 – 16 °C (summer), 16 – 18 °C (winter); stemmed rounded glass in closed tulip form
Pairing: goes very well with all types of charcuterie, tasty first courses and white meat dishes, as well as the typical recipes of Emilia and Piacenza; excellent with Piacentine tortelli pasta with butter and sage sauce
